Broccoli Kornbread
12 Tbs (or 1 ½ sticks) SOUTH
MOUNTAIN CREAMERY salted butter
1 box jiffy cornbread mix
4 SOUTH MOUNTAIN
CREAMERY eggs (beaten)
1 cup SOUTH MOUNTAIN
CREAMERY cottage cheese
1 small onion (chopped)
1 box (10oz) frozen (or 2 cups fresh) broccoli
Preheat oven to 375 degrees.
Melt butter and pour onto 13x9x2 baking pan.
Mix rest of ingredients and pour into pan.
Bake 30-35 minutes at 375 degrees until golden brown.
Cool slightly before cutting into squares.
